Recipes in The BadAss Body Diet Menu for all Plans!

I just chose a few of my favorites from the recipe’s Christmas Abbott provides in the book! If there is a specific one you want, I can send it to you!

Mexican Omelet

*1 Serving (2 brick breakfast – to increase to 3 up the measurements to 3/4 cup peppers, 1/2 cup jalapeno, 1/2 cup onion, 3 eggs, 1/2 teaspoon olive oil

olive oil cooking spray

1/2 cup chopped green pepper

1/4 jalapeno pepper

1/4 cup chopped onion

2 eggs

1 teaspoon olive oil

Saute peppers and onions then remove to plate. Whisk eggs and olive oil. Season with salt and pepper. Cook eggs and when omelet is set, add veggies.

Texas-Style Chili

*2 Servings (3 bricks per serving. To create 4 brick increase to 5 oz beef, 5 oz. turkey sausage, 1 onion)

3 oz. ground beef

2 oz. ground turkey sausage

1/2 onion, chopped

1 garlic clove, minced

1 cup chopped green bell pepper

1 cup canned diced stewed tomatoes (don’t drain)

1 tablespoon chili powder

1 teaspoon ground cumin

Salt and Pepper to taste.

Brown the beef and turkey sausage until cooked. Add remaining ingredients. 15 – 20 minutes until veggies are tender and chili has slightly thickened.

Coconut Shrimp

*4 Servings (3 oz. serving for 3 brick; 4 oz. serving 4 bricks)

Olive oil cooking spray

1/4 cup almond flour (or 1/2 cup almonds ground in blender)

1 teaspoon salt

1/4 cup unsweetened shredded coconut

1 lb. large shrimp, peeled/deveined

3 egg white, beaten

Preheat oven to 400 degrees. Combine almond flour and salt in bowl. Coconut separate bowl. Separate bowl beat egg whites. 1 shrimp at a time in almond flour then egg  whites. Roll shrimp in coconut coating. Cook on baking sheet. Spray shrimp liberally with cooking spray and bake 12-15 mins or until lightly browned.

“Spaghetti” and Meatballs

*4 Servings (3 bricks per serving)

“Spaghetti”

Olive oil cooking spray

1 large spaghetti squash (3/4 cup servings)

Meatballs

1 lb. ground turkey

1/2 cup finely chopped onion

4 garlic cloves, minced

1/4 cup minced fresh basil

1/2 zucchini, shredded

2 eggs, well beaten

1/3 cup almonds, processed to fine flour in blender

2 teaspoons salt

1/2 teaspoon pepper

1 cup no-sugar added marinara sauce (ex: Monte Bene Spicy Marinara)

Preheat oven to 400 degrees. Cut squash in half and remove seeds. Place halves cut side down in glass baking dish. Fill dish with water 1/2″. Bake 45 mins. Remove spaghetti like strands from squash and keep warm.

Combine ingredients for meatballs in large ball and mix with hands. Form into ping-pong size balls and bake 30 minutes.

Stuffed Peppers

*4 Servings (3 bricks per serving)

Olive oil cooking spray

4 large red or green bell peppers

1 lb. lean ground beef

1/2 cup chopped onion

2 teaspoons garlic powder

1 egg, beaten

1/4 cup almonds, processed to fine flour in blender

2 teaspoons dried italian seasoning

Salt and Pepper to taste

1 cup no-sugar-added marinara sauce (Monte Bene Spicy marinara)

Preheat oven to 350 degrees. Cut tops off peppers and place in a pot of salted boiling water for 5 mins. Drain. Brown beef, drain, and combine with everything except marinara. Fill peppers and place in baking dish. Spoon sauce over peppers. Cover dish with foil and bake 30-45 mins.

Balsamic Dressing for your Salad!

*Makes 1 1/2 Cups

1/2 cup white balsamic vinegar

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1 teaspoon dried italian seasoning

1 teaspoon salt

1/2 teaspoon pepper

Pinch of cayenne pepper

1 cup olive oil

Place vinegar and 2 tablespoons water in jar with lid. Add seasonings. Place lid and shake well. Add oil and shake until smooth. Store in refrigerator up to 3 weeks.

Egg Muffin Snacks

*4 Snacks (7g protein, 4.5g fat) – add 10g carbs and you have a 1 brick snack!

Olive oil cooking spray

4 eggs

1/3 cup cooked bacon (about 3 slices) cook until crispy then crumble

1/4 cup diced jalapeno

1 tablespoon olive oil

Salt and Pepper to taste

Preheat oven 350 degrees. Whisk eggs. Add bacon, jalapeno, olive oil, salt, and pepper in bowl. Divide evenly in 4 muffin tins. Bake 18-20 mins or until knife comes out clean. Cool then refrigerate for snacks.
